Cherry, Rocket and Feta Salad
- 350g cherries, halved and pitted
- 480g Feta
- 60g rocket leaves
- 3 tbsp extra virgin olive oil
- 1 green chilli
- 1 tbsp balsamic vinegar
- 1 tbsp pumpkin seeds or your favourite nut and seed mix
Arrange the cherries on a serving platter with the feta and rocket.
In a small bowl, whisk the oil with the chilli and vinegar; season.
Drizzle the dressing over the salad and scatter over the crushed pumpkin seeds or your favourite nut and seed mix.
Serve with the toasts or crusty bread.
