Roasted Beet Hommus

Ingredients

  • 1 small organic Goodness Me Fresh beet, roasted (organic beets have a lot more flavour and well worth making the switch from conventional)
  • 1 can cooked chickpeas
  • 1 large lemon
  • 1 pinch of salt and pepper
  • 2 large cloves of garlic
  • 2 heaped tablespoons of tahini
  • ¼ cup extra virgin olive oil

Method

Step 1

Blend roasted beetroot until smooth in a food processor.

Step 2

Add remaining ingredients except for olive oil and blend until smooth.

Step 3

Drizzle in olive oil as the hummus is mixing.

Step 4

Taste and adjust seasonsing as needed. Can be kept in the fridge for up to a week.
