Roasted Beet Hommus
- 1 small organic Goodness Me Fresh beet, roasted (organic beets have a lot more flavour and well worth making the switch from conventional)
- 1 can cooked chickpeas
- 1 large lemon
- 1 pinch of salt and pepper
- 2 large cloves of garlic
- 2 heaped tablespoons of tahini
- ¼ cup extra virgin olive oil
Blend roasted beetroot until smooth in a food processor.
Add remaining ingredients except for olive oil and blend until smooth.
Drizzle in olive oil as the hummus is mixing.
Taste and adjust seasonsing as needed. Can be kept in the fridge for up to a week.
