Vegan Carrot Cake
- 2 ½ cups flour all-purpose flour
- 1 teaspoon sea salt
- ½ cup applesauce
- 1 cup almond milk
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 1 cup sugar
- 2 teaspoons cinnamon
- ½ cup canola oil
- 3 cups grated carrots
Preheat oven to 180 degrees. Grease cake tin and line with baking powder.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt.
Pour in the applesauce, almond milk, sugar, oil and vanilla extract and mix until combined.
Fold in the carrots and stir until combined.
Pour the cake mixture into the lined pan and bake for 35 to 40 minutes or until a toothpick comes out clean. Let the cake cool for at least 15 minutes.
