Warm Me Up Apple Cake


  • 125g butter softened
  • 165g (¾ cup) caster sugar superfine sugar
  • 2 tsp vanilla extract
  • 2 eggs approx. 55g each
  • 225ml milk full cream
  • 225g (1 and ½ cups) self-raising flour sifted
  • 3 Goodness Me Fresh organic apples cored, peeled and thinly sliced
  • ½ cup (45g) flaked almonds see notes
  • 3 tbsp raw sugar


Step 1

Grease the bottom and sides of a 22cm springform pan. Line the base with baking paper.

Step 2

Preheat oven to 160 degrees Celsius (fan-forced).

Step 3

Beat the butter, caster sugar and vanilla extract until smooth and creamy. Add the eggs and milk and beat until combined.

Step 4

Sift in the self-raising flour and beat until just combined.

Step 5

Pour half of the mixture into the prepared tin. Add a layer of the thinly sliced apples (half of them).

Step 6

Repeat with the remaining cake mixture and apple slices.

Step 7

Sprinkle over the flaked almonds and the raw sugar.

Step 8

Bake in the oven for 40-45 minutes or until the cake is cooked when tested with a skewer.

Step 9

Leave to cool in the baking pan for 20 minutes before placing onto a wire rack to cool completely.

Step 10

Serve on its own or warm with a scoop of vanilla ice cream.
